    • Cheesy Poblano Pepper Casserole

      As the weather starts transitioning to cooler temperatures, I start craving warm & spicy foods. This cheesy poblano casserole hits the spot. A perfect blend of summer flavors with the warmth & spice of fall. With the layers of roasted poblano, seasoned ground beef and cheese, you will be making this again & again!

      This recipe is really a good base for experimenting with different spices and ingredients. For example, if you want to take the heat level up, add some red pepper flakes or for added spice, toss in a dash of smoked paprika. And of course you can always add a can of rotel or green chili’s for added flavor.

      To start, you want to give your poblano peppers a nice char by roasting them. You can achieve this on an open flame such as your grill or gas stove; however, I just pop them in the oven at 450 degrees for about 20 minutes.

      Once you take them out of the oven, pop them into a zip lock bag for a little steam action. This will make it much easier to peel the skin.

      While the peppers are roasting, sauté your chopped onions and garlic in a glug of olive oil, until tender. Add ground beef, cumin and any other spice or ingredient you want and cook until meat is browned. Drain grease.

      Once the peppers steam in the ziplock bag for about 15 minutes, peal the skin, cut in half lengthwise and scrape the seeds out.

      Finally assemble the casserole by layering the sliced poblanos in the bottom of a greased 9″ baking pan. Follow that with the ground beef mixture and then cheese; repeat the layers.

      Bake at 350 degrees for 30 minutes or until the cheese is bubbly and slightly browned on top. Enjoy with some homemade avocado salad or rice and beans.

       

      Cheesy Poblano Pepper Casserole

      This warm and hearty casserole with layers of poblano peppers, seasoned ground beef and cheese is sure to be a favorite!

      Ingredients
        

      • 4 Poblano Peppers
      • 1 lb Ground Beef
      • 1 Small Onion, chopped
      • 3 cloves Garlic, mincedd
      • 1 tsp Cumin
      • Salt & Pepper to taste
      • 1 cup Shredded Cheddar Cheese
      • 1.5 cups Monterey Jack Cheese Combine the two cheeses together

      Instructions
       

      • Preheat Oven to 450 degrees and line a baking sheet with foil.
      • Wash and dry the peppers; place them on the baking sheet. Cook in the oven for 20-25 minutes or until the skin is charred and blacken. You may want to turn the peppers after 10 minutes of cooking.
      • Once roasted, take the peppers out of the oven and transfer to ta zip lock bag, to steam for 15 minutes. This will loosen the skin. When cool enough to handle, remove the skin, slice in halve lengthwise and scrape the seeds out.
      • Turn oven down to 350 degrees.
      • While the peppers are roasting, saute onions and garlic in a glug of olive oil over a medium heat. Once soft, add ground beef, cumin, salt, pepper and any other spices you want. Once the beef is thoroughly cooked, drain grease and return to pan.
      • In a 9" baking dish, spray with a non stick cooking spray. Place four poblano pepper halves on the bottom of the baking dish, then spread half of the beef mixture on top of the peppers and then layer half of your cheese mixture. Repeat the layers once more, peppers, beef then cheese.
      • Bake uncovered at 350 degrees for about 30-35 minutes or until the cheese is melted and browned.
      • Serve with chips and an avocado salad or with rice and beans.

    • The Easiest Peach Cobbler, Ever! Seriously!

      This Bisquick Peach Cobbler, will be the easiest recipe you will ever make, with an added spicy twist. Use fresh, frozen or canned peaches. You just can’t go wrong with this simple yet flavor packed summer treat.

      When we moved into our dream home four years ago, we planted two peach trees. One peach tree would produce early summer and the other in the late summer. Perfect for two people!

      Two years later we had our first crop of peaches. I was amazed at how many peaches two little trees could produce! And this year, they produced even more.

      I have always been a fan of peaches. Nothing sweeter than a fresh picked, juicy, wonderful peach. But, these peaches weren’t going to last long. I made hand pies, cobblers, preserves and then processed and froze the rest to be enjoyed all year long.

      A few weeks ago, I was looking for a quick sweet treat to whip up for friends, who were popping in. It just so happened to be right in the middle of peach season and we had them dripping off the tree. Everyone loves Peach Cobbler…at least everyone I know! So, a quick & simple Cobbler it would be.

      Now, it’s a fact, that down here where I’m from, everyone swears by their Grandmother’s old fashioned recipe. You know the one. Hand made from scratch, hours in the kitchen, rolling, kneading, cutting, prepping & baking. What? I ain’t got time for that! I said I need quick and easy.

      So, it was a box of Bisquick to the rescue. That’s right, Bisquick. I baked the most delicious and easiest peach goodness I ever tasted, from a biscuit mix!

      I started with fresh from the tree peaches. They were still warm from the summer heat. Give them a good wash, peel and slice into chunks and you are basically finished…just a quick toss of ingredients and you are done!

      Stir together Bisquick mix, milk, cinnamon, nutmeg and ground clove in an 9″ baking dish. Stir in melted butter. In a large bowl, toss the sugar and peaches and spoon over batter.

      If you need a simple summer dessert, you will definitely want to try this go to recipe. Even with a few ingredients, the flavor is delicious and inviting.

       

      Bisquick Spicy Peach Cobbler

      Ingredients
        

      • 1 cup Original Bisquick Mix
      • 1 cup Milk
      • 1/2 tsp Ground Nutmeg
      • 1 tsp Ground Cinnamon
      • 1/2 tsp Ground Clove
      • 1 1/2 cups Sugar
      • 2 cups Fresh Peaches, peeled and sliced
      • 1/2 cup Butter, melted

      Instructions
       

      • Heat oven to 375 degrees
      • In a 9” baking dish, stir together Bisquick mix, milk, ground cinnamon, ground nutmeg and ground clove. Stir in melted butter until blended.
      • In a separate bowl, stir together sugar and peaches; spoon over batter, evenly.
      • Bake 50-60 minutes or until top is golden.

    • Granny Rozell’s Pecan Pie Recipe Framed

      Shane’s Granny Rozell is a 94 year young ball of fire! There is no other way to describe this wonderful lady. In fact both of Shane’s grandmothers (the other being Granny Ina, a Texas Ranger’s FANatic) are amazing and you will find I talk a lot about them, the way they inspire me and influence me everyday.

      But, back to Granny Rozie. She is famous for her pecan pies. Every reunion, holiday or family gathering she will bring a pecan pie. When she moved into a retirement home last year, Shane and I helped clean out her home. I stumbled upon a hand written recipe for Pecan Pie and secretly hoarded it away. I knew that it had to be framed and kept in a special place.

      Now, I will NEVER accuse myself of being a perfectionist or even close to it for that matter. Saying that, I am sure there are better ways to create the same project; probably ways to archive and preserve the original paper, to mount the recipe and better paper to use; however, this serves the purpose for me. Maybe this will serve as inspiration for you and you can expand on the same project and make it better.

      The main idea behind this was to honor a special lady and something to give us memories of sweet Rozie with.

      So, here are my tools and supplies to frame Granny Rozie’s Pecan Pie Recipe: Hand Written Recipe Card (I used a pecan pie recipe and a pecan and coconut frosting recipe), black scrapbook paper, a shadow box frame, tape, pencil and scissors.

      Granny Rozelle kept a lot of her recipes in a Rolodex type recipe file (it will be a future up-cycle project for sure.) I love how time has browned the edges and given the cards a well worn look. I can just look at one and feel the love that went into baking and making each recipe.

      First thing, I took off the back of the shadow box frame and used it as a template to trace the shape onto black scrapbook paper and then cut the shape out.

      Using the old fashion technique of rolling a piece of tape into a circle, I placed several onto the back of the black rectangle and taped it into the inside of the frame backing. Of course, a practical person would have used double sided tape or mounting squares….hey, I just grab what is closest at the time. See, now you are even seeing that my picture will never appear next to the definition of a perfectionist.

      Once again, using the ‘ol roll and tape method, I taped the recipe cards to the paper, carefully eyeing the placement. Of course you could use a level or ruler, but eyeing it works for me.

      After putting the shadow box back together, we hung the recipe card in our hall, making it a wonderful addition to our Family Memory Gallery. More on that project later. For now, hats off to the amazing life of Granny Rozell and her awesome pecan pies!
